I borrowed this recipe from AllRecipes.com.
2 cups all purpose flour
1 teaspoon baking soda
¼ teaspoon salt
¾ cup brown sugar
½ cup butter (softened)
2 eggs (beaten)
2 ⅓ cups mashed overripe bananas
chocolate chips/crushed walnuts (optional)
Preheat oven to 350° F (175° C).
Lightly grease/smear butter onto a 9x15 inch loaf pan, or apply a layer of parchment paper (my method).
Mix flour, baking soda, and salt in a large bowl.
In a separate medium bowl, beat brown sugar and butter together until smooth. stir in eggs and mashed bananas until well blended.
Pour wet mixture into dry mixture and stir until only JUST combined. Don't overmix!
Pour batter into loaf pan.
Bake loaf for 60-80 mins (depending on oven strength) until a toothpick inserted into the center comes out clean.
Let loaf cool for at least 10 minutes before turning it onto a wire rack—or pulling it out by its parchment paper—to cool completely.
