1-2 cucumbers
olive oil
sesame oil
chilli oil (optional)
soy sauce
balsamic vinegar
lemon juice
salt
pepper
Cut, smash, or chop cucumber. I like to make my cucumber into an accordion shape by laying flat and slicing thin slices two thirds deep into the cucumber then rolling it over to the other side and cutting two thirds deep at an angle. Then rip this accordion into smaller bite-size pieces.
Mix your dressing in a separate bowl (or in the salad bowl before adding the cucumber). Half should be oils, the rest is composed of the remaining liquids with salt and pepper to taste.
Mix dressing into salad and let it soak in for a bit.
