strawberry muffins

2 cups flour
¾ cups granulated sugar
2 ½ tsp baking powder
½ tsp salt
2 eggs
1 cup milk
⅓ cup vegetable oil
1 tsp vanilla extract
1 cup sliced strawberries
Streusel Crumb Topping:
2 tbsp softened butter
⅛ cup lightly packed brown sugar
¼ cup flour
Preheat oven to 400°F (210°C). Grease your muffin pan or use muffin liners.
Prepare the streusel crumb topping: combine flour, butter, and brown sugar. Press the butter along the edge of the bowl for easier mixing.
In one medium bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, whisk together eggs, milk, oil, and vanilla. Add sliced strawberries.
Pour the wet ingredients into the dry ingredients and fold together with a spatula until combined. Don't over-mix.
Spoon batter into the muffin pan.
Sprinkle 1 tbsp of streusel topping on each muffin.
Bake for 15-17 minutes.
Let cool in pan before loosening with chopsticks and twisting out of pan (if baking without paper liners).
