I borrowed this recipe from BBC.
1 tbsp oil
1 onion (chopped)
3-4 garlic cloves
thumb-sized piece of ginger
3 tbsp red thai curry paste
1 tbsp peanut butter
1 sweet potato (peeled & chopped)
1 can coconut milk
up to 200mL water
1 lime
cooked rice
Heat oil in a pan and soften chopped onion for 5 minutes. Add garlic and ginger and cook for another few minutes.
Mix in red thai curry paste and peanut butter.
Add sweet potato chunks, coconut milk, and water.
Bring all to a boil and simmer for 25-30 minutes.
Cook rice to accompany the curry.
Serve with a squeeze of lime on top, if you want.
